TURAI KI SABJI
Preparation time : 10 minutes
Cooking time : 20-25 minutes
Servings : 2
Ingredients
2-3 tbsp Ghee (घी)
1 tsp Cumin Seeds (जीरा)
½ tsp Fennel Seeds (सौंफ)
¼ tsp Asafoetida (हींग)
3-4 Garlic - chopped (लेसन)
1 inch Ginger - chopped (अदरक)
3 fresh Green Chillies - chopped (हरी मिर्च)
2 medium Onion - sliced (प्याज़)
Salt to taste (नमक स्वादानुसार)
½ tsp Turmeric Powder (हल्दी पाउडर)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
1 tsp Coriander Powder (धनिया पाउडर)
3 Ridge Gourd (Turai) - sliced (तुरई)
Water (पानी)
2 medium Tomatoes - chopped (टमाटर)
3 tbsp Coriander Leaves - chopped (धनिया पत्ता)
For Garnish
fresh Coriander Leaves (धनिया पत्ता)
Process
In a kadai heat ghee and add cumin seeds, fennel seeds, asafoetida, ginger, garlic, green chillies and saute for a few seconds.
Now add onion saute until light brown then add salt, turmeric powder, degi red chilli powder, coriander powder and saute them until fragrant.
Then add the ridge gourd (turai) and saute it for a minute now add some water then cover and cook for 6-8 minutes.
Remove the lid and stir it once then add the tomatoes and cook for another minute.
Now finally add coriander leaves and give it a final mix.
Serve hot in a serving bowl and garnish with coriander leaves
