Lemon Garlic Chicken is an easy dish to make, is full of great flavour, and another wonderful dish to prepare the wood oven. This recipe begins by marinating the chicken first for at least 4 hours before cooking.

To make the marinade for the chicken I mixed together:

¼ cup extra-virgin olive oil
1 tablespoons chopped fresh oregano (or dry oregano)
1 tablespoons chopped fresh thyme (or dry thyme)
4 grated garlic cloves
The zest of two lemons, plus the juice
2 teaspoons salt
Some freshly cracked black pepper

Then I use 8 pieces of boneless chicken thighs, but you can use whatever your favourite cuts of chicken are. Mix that all together, and let it marinate.

Add 4 halves of lemon, some whole heads of garlic with the tops cut off, and some quartered shallots. Drizzle over a some olive oil, and season with more salt and pepper
