Vegan Russian Salad

Serves 6-8 people

Ingredients:

Mashed potato:
-1.4KG potatoes
-1/2 cup vegan mayonnaise
-100g olives
-100g sweetcorn
-100g frozen peas
-2 medium carrots
-5 pickled gherkins
-2 roasted pickled red peppers
-1 1/2 tsps salt

Topping:

-70g olives
-1 roasted pickled red pepper
-2/3 pickled gherkins
-1/2-3/4 cup of vegan mayonnaise

Method:

-Cut the ingredients for the mash, i like to keep everything roughly cut to the same size.
-For the topping cut the roasted pickled red peppers and the gherkins into even strips, cut the olives into thin rings
-Boil the potatoes in salted water until well cooked
-While the potatoes are cooking, boil the carrots for 10 minutes until tender.
-Once potatoes are cooked, keep the drained water to one side for the mashing process
-Begin to mash the potatoes gradually adding a little water at a time
-Add the mayonnaise to the mash
-I like my mash soft, if you prefer it stiffer, add less water
-Add the salt and adjust amount if needed
-Add the peas, sweetcorn, carrots, gherkins, olives and roasted pickled red peppers then mix in

-Empty mixture into a 20x30cm dish and level out
-Spread 1/2-3/4 cup vegan mayonnaise evenly over the top of the mixture then decorate with your topping ingredients

-Chill in the fridge before serving
