How to Make a Giant Cookie cake filled with Oreos, Nutella, Chocolate of all kinds. This is one seriously loaded and delicious cookie cake!

Loaded Giant Cookie Cake | How To Make the BEST Cookie Cake

RECIPE:

2 and 1/4 cups (280g) all-purpose flour
1 teaspoon baking soda
1 tablespoon cornstarch
200gms butter melted (1.5 sticks or 170g)
3/4 cup (150g) packed light or dark brown sugar
1cup granulated sugar
1 large egg + 1 egg yolk, at room temperature
2 teaspoons pure vanilla extract
1 cup semi-sweet chocolate chips or chocolate chunks

1. In a medium bowl, whisk the melted butter, brown sugar, and granulated sugar together.
2. Whisk in the egg and the egg yolk. Then finally, whisk in the vanilla extract.
3. Sieve through flour, baking soda and cornstarch. Mix together with a large spoon or rubber spatula. The dough should be very soft but still thick.
4. Fold in the chocolate chunks.
5. Add 2/3 of the cookie dough into a greased cake pan. Push down and up around the rims of the cake tin to create the sides of the cookie cake.
6. Add in Nutella, Oreos and white chocolate in layers.
7. Press out the remaining cookie down onto a greased surface and add to the top of your cookie cake. Press the dough down to ensure its attached to the rest of the cake.
8. Chill dough for 60 minutes then cook at 160C for 20-25 minutes. The cookie cake should just change slightly golden. I do recommend monitoring the cake in the oven to ensure it does not overcook.
9. This cake is better formed and looks better when it's cut when it is cut the following day :)
