On our quest for sourdough we found ”Kosmas” sourdough. Kosmas sourdough is based on the use of holy water. We preserve a sample of it in our sourdough library in the Puratos Center for Bread Flavour. In this movie you can discover together with us a centuries old tradition of Greek sourdough making.
