Back on our quest for sourdough we have discovered yet another particular one. In the city of Guadalajara in Mexico we found a baker making Birote sourdough. A sourdough containing lime, eggs and beer. Resulting in a delicious bread that is used to make “torta ahogada”, a drowned sandwich that has become a local delicacy. This sourdough has been added to our sourdough library in the Center for Bread Flavour.
