1.26 kg mie

Cincang merah
300 gr babi cincang (5-10% lemak)
2 siung bawang putih cincang
1 sdm bubuk angkak
1 sdt gula
3/4 sdt garam
1/2 sdt lada
1 sdm minyak wijen
1/2 sdt angciu atau shaoxing wine
3 sdm minyak sayur untuk menumis


Cincang kecap
300 gr babi cincang (5-10% lemak)
2 siung bawang putih
1/2 buah bawang bombai
1,5 sdm kecap asin
1 sdm saus tiram
1/2 sdt lada
1 sdm kecap manis
1 sdm minyak wijen
1/2 sdt kaldu jamur
4 sdm minyak sayur untuk menumis

Saus mie per mangkok (12 porsi @105 gr)
1 sdm kecap asin
1 sdm minyak cabai
1 sdt minyak babi
1 sdt minyak bawang putih
Sedikit lada

Pelengkap
Daun bawang iris
Krupuk lemak atau kulit babi
Pangsit goreng
Kaldu babi

Red minced pork
300 g of minced pork(5-10%fat)
2 cloves of minced garlic
1 tbsp of red yeast rice powder
1 tsp of sugar
3/4 tsp of salt
1/2 tsp of white pepper
1 tbsp of sesame oil
1/2 tsp of shaoxing wine
3 tbsp of vegetable oil

Soy sauce minced pork
300 g of minced pork
2 cloves of minced garlic
Half of onion
1,5 tbsp of soy sauce
1 tbsp of oyster sauce
1/2 tsp of white pepper
1 tbsp of sweet soy sauce
1 tbsp of sesame oil
1/2 tsp of granulated mushroom bouillon
4 tbsp of vegetable oil

The sauce for each portion (@105 g of noodles)
1 tbsp of soy sauce
1 tbsp of chili oil
1 tsp of lard
1 tsp of garlic oil
A pinch of white pepper

Condiments
Sliced spring onion
Crispy minced pork fat
Crispy wanton wrapper
Pork broth
