Vietnamese Sweet and Sour Soup w. Shrimp // Canh Chua Tôm
Servings: 6
Ingredients:
2 roma tomatoes, quartered
1/4 pineapple, cut into bite-sized chunks
3 stalks elephant ear stem, peeled and cut into bite-sized pieces
Okra (optional)
Bean sprouts, as desired
1 cup rice patty herb, chopped
1 cup sawtooth coriander, chopped
2 Fresno chilies, thinly sliced
1 large shallot, minced
1 lb shrimp, peeled and deveined
2 liters water
1/2 cup tamarind concentrate
3 tablespoons fish sauce
3 tablespoons sugar
1 tablespoon kosher salt
1 tsp chicken bouillon powder
1/2 teaspoon MSG (optional)
Salt and pepper to taste
Lime juice to taste
For Fried Garlic:
10 garlic cloves, minced
Neutral oil, as needed
Instructions:
1. Start by preparing your vegetables. Quarter the tomatoes, season them with salt and black pepper, and set them aside.
2. Cut the pineapple into bite-sized chunks, and prepare the elephant ear stem by peeling and cutting it into bite-sized pieces.
If you're using okra, prepare it as well.
3. In a separate pan, heat about 6 tablespoons of neutral oil over medium-low heat. Fry the minced garlic until it turns a light blonde color. Strain the garlic and reserve it for later.
4. Clean out the pan, add half of the infused garlic oil back in, and par-cook the shrimp. Finish by seasoning with salt and black pepper, and then set the shrimp aside.
5. In a large pot, add the remaining garlic oil and fry the minced shallot until translucent. Add the pineapple and sauté for a few seconds. Pour in water, tamarind concentrate, sugar, kosher salt, chicken bouillon powder, and MSG (if using). Bring the soup to a simmer.
6. Once the soup is simmering, add the tomatoes and okra (if using), and simmer for 4-5 minutes.
7. Afterward, add the rest of the veggies, including 1/2 cup of chopped rice patty herb, sawtooth coriander, and Fresno chilies.
8. To serve, ladle the soup into large bowls and garnish with the remaining chopped herbs and fried garlic. Adjust the seasoning with salt, pepper, and lime juice to taste.
