這個湯水我是在佛山學會回來的,他們一般是用新鮮樹上摘落嚟的黃皮,再把新鮮豬骨煎香,沖入熱水,而製成。我這個湯水做了一點調整,就是把清補涼也加入去。效果也不錯。絕對是夏日精彩湯水之一。

材料
a.  20粒新鮮黃皮
b. 250克豬背脊骨
c. 清補涼一包
d. 紅蘿蔔兩條
e. 靚薑三四片

做法
1. 首先把豬骨凍水落煲飛水
2. 清洗豬骨後放入煲內
3. 加入浸軟的清補涼
4. 放入清洗好的黃皮
5. 加入兩個紅蘿蔔及薑片
6. 加入2公升水,建議用熱水
7. 大火,煲滾後
8. 𨍭中細火煲1小時

I learned how to make this soup in Foshan. They usually use freshly picked yellow skin from trees and fry fresh pork bones to make it. Then they add hot water to it. I made some adjustments to this soup by adding Qing Bu Liang. The result is quite good. It is definitely one of the exciting summer soups.

Ingredients:

a. 20 pieces of fresh yellow skin
b. 250g pork backbones
c. 1 packet of Qing Bu Liang
d. 2 carrots
e. 3-4 slices of fresh ginger

Instructions:

1. First, blanch the pork bones with cold water.
2. Wash the pork bones and put them into the pot.
3. Add the soaked Qing Bu Liang.
4. Add the washed yellow skin.
5. Add two carrots and ginger slices.
6. Add 2 liters of water. It is recommended to use hot water.
7. Heat on high until boiled.
8. Reduce heat to low and simmer for 1 hour.
