We had our first real frost a week ago and all the leaves from my persimmon trees have all dropped. Jiro Fuyu was pollinated by my nearby chocolate persimmon. This makes my jiro fuyu, often seedless become seeded and oddly astringent still crunchy.
Chocolate persimmon ripens later than my other astringent persimmons. Often needed to pollinate other persimmons like maru and hykume. if a persimmon ripens on the tree before frost would be best flavor
frost helps remove astringency from astringent persimmons rapidly.
for this reason persimmons must be picked soon after it has frost
should we be afraid of frost damaging persimmon fruit? not necessary.
does frost sweeten fruit? No, it simply removes astringency as often one of the ways to remove astringency is to put astringent persimmons in freezer. but often the flavor isn't as good as vodka method.


Today's harvest I prefer chocolate over my jiro fuyu. If i had to grow just one tree Chocolate would be my choice instead of the more popular fuyu persimmon.
