How to Make BASIL PESTO with Mortar and Pestle (Authentic Pesto alla Genovese)

Traditionally, Italian basil pesto (called 'Pesto alla Genovese' in Italian) is made with a mortar and pestle. This tool allows mashing of the ingredients (rather than simply chopping), bringing out the best flavor from the fresh basil, garlic and pine nuts!

INGREDIENTS
Fresh basil - 50 leaves (30 g) / 1 oz
Garlic - 1 clove
Parmigiano cheese - 1.5 oz (40 g)
Pecorino cheese - .75 oz (20 g)
Olive oil - 2.5 tbsp (40 g)
Pine nuts - .5 oz (15 g)
Coarse salt - pinch

TIPS
Freeze the mortar and pestle for about an hour before using it to make the basil pesto! It's important to avoid heating the ingredients while preparing the pesto. Heating the ingredients will change the flavor for the worse.
