Coconut & Chickpea Flour Banana Bread
INGREDIENTS

WET INGREDIENTS
6 ripe bananas, mashed
3/4 cup coconut oil, melted
3/4 cup coconut sugar
2 large eggs
2 tsp vanilla extract

DRY INGREDIENTS
1 cup garbanzo bean (chickpea) flour
1 cup coconut flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon (optional for added flavor)
1/4 cup chocolate chips

ASSEMBLE
Preheat your oven to 350°F (175°C). Grease or line a 9x5-inch loaf pan with parchment paper.
In the blender, combine the mashed bananas, melted coconut oil, coconut sugar, beaten eggs, and vanilla extract until well mixed.
In a bowl, whisk together the garbanzo bean flour, coconut flour, baking soda, baking powder, salt, and cinnamon (if using).
Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined to avoid overmixing. If using chocolate chips, fold them in now.
Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean. The use of coconut flour, which is highly absorbent, and garbanzo bean flour may affect baking time, so it's advisable to start checking at the 35-minute mark.
Allow the banana bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Once cooled, slice the banana bread and serve. It can be enjoyed warm or at room temperature.

Tips:
Coconut flour is highly absorbent, so the liquid ratio in this recipe is adjusted to accommodate that. If the batter seems too thick, you can add a little more mashed banana or a splash of your preferred milk to achieve the desired consistency.
