Recipe -
For the cupcakes...
1 cup self raising flour
½ cup caster sugar
½ cup soft unsalted butter
1/4 tsp baking soda
½ tsp vanilla extract
2 lg eggs
1.5 tbsp very strong coffee, ideally espresso plus 2 tbsp of water

For the filling...
1/3 cup double cream
1 tsp caster sugar
1.5 tbsp very strong coffee, ideally espresso

For the Mascarpone icing...
1/3 cup soft unsalted butter
½ cup mascarpone
2 cups icing sugar, sifted
