Freeze dried Sweet Potato Chips -- Freeze Dried Yams

I am always looking for healthy snacks and alternatives to freeze dry. It makes it extra great when it's something that comes in abundance in the garden. Enter....Freeze dried sweet potato chips! No oil, no cooking & full of vitamin A and Fiber. I added smoked paprika that was really tasty, but there are lots of other ways to spruce up a regular, plain sweet potato. The freeze dry cycle on this was super fast at 19 hours, which means you could do lots and lots of these in a short period of time. All it takes is a quick blanch in hot water and an ice bath. Layer the taters on the tray (go for a second layer if you have some pre-cut parchment) and stick em' in the FD!
