Recipe: Padengi / Sprouted sweet moong usli
Cuisine: Udupi/Mangalore
Prep time: 10 mins

Servings: 3-4
Ingredients:
1 cup Whole Green gram/ Hari Moong dal
4 Cups water/Pani (to soak)
¼ tsp salt/ namak (adjust to taste)
4 cups water/pani (to cook the green gram)
¼ cup Jaggery/gud (adjust to taste)
½ cup Coconut/nariyal (scraped)

For Tempering:
3 tsp Coconut Oil/nariyal tel
½ tsp Mustard seeds/sarso/rai
1 Green chilli/hari mirch
2 dried Red Chillies/sukhi lal mirch
¼ tsp Hing/Asafoetida
1 Sprig curry leaves

Method:
1. Wash and soak Moong dal in water for 10-12 hours or overnight.
2. Add the drained moong in a deep vessel. To this add salt and water.
3. Cook over low-medium heat for 1 minutes or until cooked but not mushy. Turn off heat.
4. Add jaggery and coconut to the cooked moong. Mix until combined.
5. For the tempering add oil in a pan. Once the oil is hot add mustard seeds, green chilli, red chilli, hing and curry leaves.
6. Fry for 1 minute or until curry leaves turn crispy.
7. Pour hot tempering over the prepared moong mix.
8. Serve immediately with avalakki chutney/bajil and hot tea.
