Time for lunch! This is how to prep lunch for days 2-5 of our DIY fasting mimicking diet. Like the other DIY FMD prep videos, though this is designed (and weighed) specifically for the purpose of going into and staying in a fasting state and stay in ketosis, it too is a great lunch to have (with more calories) when you're not fasting. It's a beautiful way to get a variety of plants into us to feel great, keep the bowels moving 💩, and flood our bodies with nutrients to help us heal and thrive.

There's no need to measure or weigh anything if you're enjoying this outside of a fast.

During a fast, you can feel free to dress up the salad with some spices like dried chili flakes, a squeeze of lemon, or my favorite, a little onion powder. (We're allowed 1 tbsp a day of spices to dress up our meals.)

After this lunch, I am always still hungry and want to reach for my snack. Please do your best to hold off on that snack for at least 2-3 hours. Even holding off 1 hour before you enjoy that glorious snack will serve you well.

Some days - and especially if you're a fasting pro and no longer feel hunger during fasting - you won't even need the snack. In that case, since I love to snack at night, it's a special treat when I reserve it for the evenings.

Alternatively, if you blend your dinner soup, you can also add the cashews to your soup ingredients and let them soften as the vegetables cook, and then blend it all together. This adds a richness to the soup's flavor and it is sooo good, you'll think of making this soup (with cashews) even when you're not fasting. Enjoy ✨
