Lemon Blueberry Loaf 🍞🫐🍋

Ingredients:
• 130 g (1 cup) all-purpose flour
• ¾ tsp baking powder 1/2 + 1/4 tsp
• ⅛ tsp baking soda pinch
• ⅛ tsp salt
• 90 g (6½ tbsp) unsalted butter, softened
• 105 g (½ cup + 1 tbsp) granulated sugar
• 1 large egg
• ½ tsp vanilla extract
• Zest of 1 lemon
• 1½ tbsp fresh lemon juice
• 65 ml (¼ cup + 1 tsp) buttermilk
• 105 g (¾ cup) fresh or frozen blueberries
• 1 tsp flour (for tossing blueberries)


Instructions:
1. Preheat oven to 350°F (175°C). Grease and line a small loaf pan (around 7x3-inch) with parchment paper.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a large bowl, beat butter and sugar until light and fluffy (2–3 minutes).
4. Add the egg and beat until well incorporated. Mix in vanilla, lemon zest, and lemon juice.
5. Gradually add dry ingredients alternately with buttermilk, starting and ending with dry ingredients. Mix gently until just combined.
6. Toss blueberries with 1 tsp flour and fold them gently into the batter.
7. Pour batter into the prepared loaf pan and smooth the top.
8. Bake for 42–50 minutes, or until a toothpick inserted in the center comes out clean.
9. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before frosting.

Lemon Cream Cheese Frosting

Ingredients:
• 60 g (4 tbsp) cream cheese, softened
• 30 g (2 tbsp) unsalted butter, softened
• ¾–1 cup (90–120 g) powdered sugar, sifted
• ½ tsp vanilla extract
• 1 tsp fresh lemon juice

Instructions:
1. Beat cream cheese and butter until smooth.
2. Gradually add powdered sugar, beating until creamy.
3. Mix in vanilla and lemon juice. Add zest if desired.
4. Frost the cooled loaf.
