Wondering how to run a successful restaurant? Scarr Pimentel is the owner of Scarr’s Pizza, regularly ranked as one of the best slices in NYC. In this episode of I Made This, he talks about his love of sourcing and working with quality organic ingredients to make his restaurant profitable.

About a decade ago, Scarr noticed the overall quality of pizza decline across New York City — something he says is a result of shops cutting corners on ingredients.

So when he opened Scarr’s Pizza in 2016, he knew he wanted to use the best ingredients in his pies. In his head, there was no reason for pizza to be junk food if he was using quality, organic ingredients.

To get his successful restaurant off the ground, he started researching ingredients, learning about the processes and chemistry that makes food tastier and more healthful. Today his slice — declared the best in the city by Bon Appetit in 2018 — is made with the best ingredients available.
