Just simple ingredients, yet the result is a mouth-watering complexity of flavours. Keep the shells on the prawns when you cook them so that they get coated by the caramelised sweet, tangy and savoury assam sauce. It is truly a finger licking experience when you peel the shells off at the dinner table! Assam Prawns is a great side dish for Nasi Lemak, and is equally good with simple white rice. Enjoy! 🦐🦐🦐

Ingredients:

14 Large Prawns (Anne prefers the flavour of Sea Prawns)

Marinate prawns in:
1 tbsp Light Soy Sauce
1 tbsp Black Soy Sauce
3 tbsp Tamarind (dilute in 1 tbsp water to make a thick paste)
2 tbsp Sugar
1/2 tsp Salt

Assam Sauce:
4 Dried Chilli (Cut into 1/2 inch pieces)
1/2 tsp Black Soy Sauce
2 tbsp Tamarind (dilute in 2 tbsp water)
Sugar (we used 2 tsp, but you will need to adjust based on the sourness of your tamarind paste)
Salt to taste

Important Note:
Tamarind of different quality will have a varying level of sourness, so adjust accordingly.
