KOPAI KOKO RECIPE

Ingredients
3 1/2 cups of flour
1 cup of sugar
4 tbsp of sugar
2 cups of water
250g Koko samoa

feeds 4 people

1) Firstly fill the pot halfway and put on stove. Place koko samoa in pot and bring to boil.
2) While koko samoa is boiling, mix dry ingredients of flour and four tbsp sugar well then add water
3) Knead dough with hands until forms consistency similar to play dough.
4) Roll out dumplings and when koko is brought to boil, add sugar and stir.
5) Add dumplings and allow to cook on medium heat for about 15mins or when it comes to boil. Stir through then put aside 2 dumplings to create thickener.
6) Stir 1 1/2 cup water with 2 dumplings t9 create thickener then pour into pot. Allow to simmer for 5mins
7) Finally add coconut cream and stir through. Allow another 5mins to set and serve. Enjoy!
