Ugadi is one of the famous festivals celebrated among the Hindus with great pomp and fanfare. Ugadi is celebrated as the New Year of the Telugu and Kannada people. It is not only celebrated by the Hindus but also by Sindhis and Maharashtrian people. The festival is known by different names in different states. It is known by the name of ‘Ugadi’ by the people of Andhra Pradesh and Karnataka and by the name of ‘Gudi Padwa’ by the people of Maharashtra and Cheti Chand by Sindhis. Each state has its way of celebrating this festival.

Ingredients :-

KOSAMBARI -

Soaked Moong Dal - 100 to 125 grams
Onion - 1 small sized finely chopped
Cucumber - 1 small sized finely chopped
Tomato - 1 small sized finely chopped
Coconut - 100 grams grated
Raw Mango - 2 Teaspoons
Coriander leaves - handful finely chopped
Roasted Cumin powder - 1/3rd Teaspoon
Salt as required


CURD RICE -

Over Cooked rice - 1 Cup or as required
Curd - 300 to 400 ml or as required
Water - 100 ml or as required
Green Grapes - 10 nos. slit cut
Black Grapes - 10 nos. slit cut
Pomegranate seeds - 50 to 100 grams
Coriander leaves - 1 Teaspoon finely chopped
Salt as required

Tempering -
Oil - 1 to 2 Teaspoons
Mustard seeds - 1/3rd Teaspoon
Urd Dal - 1 Teaspoon or as required
Curry leaves - 1 small sprig


MANGO PICKLE -

Raw Mango - 100 grams or 1 small piece finely chopped
Turmeric powder - 1/3rd Teaspoon
Red Chilli powder - 1/2 Teaspoon
Kashmiri Chilli powder - 1/2 Teaspoon
Vinegar - 1/2 Teaspoon
Boiled Water - 1/2 Teaspoon
Salt as required

Tempering -
Gingelly Oil - 1 to 2 Teaspoons
Mustard seeds - 1/3rd Teaspoon
Asafoetida - 1/2 Teaspoon or as required
Curry leaves - 1 small sprig


MANGO RICE -

Raw Mango - 200 to 250 grams grated
Green Peas - 200 grams (optional)
Onions - 1 medium sized finely chopped
Garlic - 2 to 3 pods crushed
Green Chillies - 3 to 4 finely chopped
Coriander leaves - Handful finely chopped
Coconut - 100 grams grated
Mustard seeds - 1/4 Teaspoon
Cumin seeds - 1/3rd Teaspoon
Groundnuts - 2 to 3 Teaspoons or as required
Chana Dal - 2 to 3 Teaspoons or as required
Urd Dal - 2 to 3 Teaspoons or as required
Curry leaves - 1 to 2 Sprigs
Turmeric powder - 1/4 Teaspoon
Salt as required
