I love fruit Saison so, when I was gifted some chokecherries, this seemed like a no brainer! The resulting beer was a delightful result of this experiment!
Basic recipe:
Weyermann Pilsner malt - 77.5%
White Wheat malt - 12.5%
Vienna malt - 7.5%
Caramunich III malt - 2.5%
Mash at 51.7C/125F for 20 minutes (protein rest); raise to 62.8C/145F for 45 minutes; raise to 67.8C/154f for 45 minutes
Mash out at 75C/168F for 15 minutes
TNT hops, 24g First Wort Hopping for 16 IBU
90 minute boil
56g TNT hops at flameout
1.042 OG
Pitch favorite Saison yeast
Add 5-6lb pasteurized chokecherries to carboy when fermentation seems to be slightly slowing
1.007 FG
Ferment at 75F, raising to 80F by end of fermentation.
