This is the culmination of about 90 pizzas in 8 months out of an abused home oven (you can hear the convection fan clattering away it's death rattle in the background).
My recipe is posted on "Massively Wholehearted Pizza" on Facebook. I'm more than happy to answer recipe and technique questions and take suggestions for the next video.
I've tried to faithfully represent this culinary Godsend (using my professional experience from a quarter century ago) and the kindness of those who filled in the blanks in my memory, so you can make it at home. My recipe may be different than your favorite representation, and I'm at peace with that. Change it up if you'd like, but against the advice of friends and family, I'm giving out my recipe in hopes that the good Karma will prevent it from biting me in the behind. Just don't run me out of business, eh?!
The reality, is that thousands of people have worked in these places, and the recipe isn't the holy grail. There are dozens of extremely similar versions in about 85 establishments in Southeastern Mass., since they all originated from the same source essentially.
The area is rich with cells of Greek, Italian, Irish, and Portugese families, so the influence and personal taste varies the final product a bit. Rumor has it the originator may have actually been an Albanian dude. ...Regardless, the Cape Cod Cafe, Stoughton Town Spa, Hoey's at Amvets Post 51, and the Lynwood Cafe were among those who initially developed and spread the popularity of this pizza, with Brockton, MA being the notable epicenter of it's origins.
This entire project has been in hopes of creating a Bar Pizza food truck here in Colorado's Front Range area. I'm hoping to bring part of my heritage to all the South Shore transplants that live out here, as well as introduce this area to what I consider the most craveable food on the planet, alongside Buffalo wings, ...which happen to merge well into this recipe!
The dough makes four 6.5 oz. portions, the sauce makes 14 1/3 cup portions, and the cheese will top about 8 pizzas.
