HOMEMADE RAISIN BUNS (makes 12 buns)

Ingredients for yeast mixture :
2 tsp active dry yeast
1 tsp sugar
1/4 cup (60 ml) warm water

Ingredients for dough:
4 cups (520 g) all-purpose flour
1/4 cup (50 g) sugar
1/4 cup (50 g) brown sugar
1/2 tsp salt
1 tsp cinnamon powder
1 1/4 cups (300 ml) warm water
2 tsp vanilla
1 large beaten egg at room temperature
1/4 cup (60 ml) canola oil
1 2/3 cups (250 g) raisins

For egg wash:
1 beaten egg at room temperature
1 tbsp milk

Preparation :

Yeast mixture:
In a bowl, dissolve yeast and sugar in warm water, put it in a warm spot and let stand for about 10 minutes until foamy.

⇒ In a large mixing bowl, add 2 cups (260 g) of flour, sugar, brown sugar, salt and cinnamon. Mix well and make a hole in the centre.
⇒ Add warm water, vanilla, beaten egg, oil, yeast mixture, then an additional  2 cups (260 g) of flour gradually. Mix vigorously to make a soft, workable dough.
⇒ Turn dough out on lightly floured surface. Knead for about 10 minutes until the dough is smooth and elastic. Add small amounts of flour as needed if the dough becomes sticky.
⇒ Add raisins and mix well.
⇒ Form dough into a ball and place in a bowl greased with canola oil. Grease the top of the dough, cover it with a tea towel, put in a warm place and let rise for about one hour or until doubled in size.
⇒ Punch down the dough and place it on a lightly floured surface.
⇒ Cut the dough into 12 pieces and form into balls.
⇒ Place the balls on a pan lined with parchment paper. Cover with a tea towel, put in a warm place and let rise again for about 45 minutes or until doubled in size.

⇒ Brush the top of the buns with the egg wash.

⇒ Bake in preheated oven at 360° F for about 20 minutes.
⇒ When the buns are fragrant and golden brown, this is a sign they are ready.
