Join me as I craft a delicious Cinnamon Swirl Coffee Cake using fresh milled flour.
1 3/4 C soft white wheat berries = just over 3 C fresh milled flour
( if you are using store bought AP flour use 3 C Flour)
set aside 2 Tbsp from the flour for the swirl mixture.
1/2 C soft butter
1/2 C sugar
1 1/2 C milk ( I think 1 C milk and 1/2 C sour cream would add great flavor and more moisture to have an even more delicate crumb.)
2 tsp vanilla
2 eggs
4 tsp baking powder
1/2 tsp salt
Mix all ingredients and spread into a greased 9x13. Preheat oven to 350°
In a small bowl soften 1/2 C butter, 1 Tbsp cinnamon, 2 Tbsp reserve flour, 1/4 tsp nutmeg, and 2/3 C brown sugar. Drop cinnamon mixture onto batter and swirl with a butter knife to drag the mixture thru the batter. Bake for 30 minutes. Drizzle the top of hot fresh baked coffee cake with a mixture of 1 C powdered sugar, 2 Tbsp milk, pinch of salt and splash of vanilla. Serve warm or cold.
