I made some with a touch of white chocolate, and honestly, they’re almost too pretty to eat (but sooo worth it).They’re the perfect mix of fun, festive, fabulous and everything Christmas.

Christmas Glass Cookies Recipe
Ingredients:
• 1.5 cups (230g) all-purpose flour
• 100g butter, cold
• 125g powdered sugar
• 1 tsp baking powder
• 1 tsp vanilla essence
• 2 tbsp milk
• 5 tbsp isomalt
• White chocolate or royal icing
• Sprinkles (as needed)
Method:
1. In a bowl, mix flour, powdered sugar, and baking powder. Rub the cold butter into the dry ingredients until crumbly.
2. Add vanilla essence and milk, then knead gently until the dough comes together (do not over-knead). Chill in the fridge for 30 minutes.
3. Roll out the dough between two sheets of parchment paper to 1/8-inch thickness. Cut into Christmas shapes (e.g., trees, ornaments, stockings). For half the cookies, cut out a small center hole using a smaller cutter.
4. Arrange cookies on a baking tray and bake in a preheated oven at 180°C for 12-15 minutes. Let cool completely.
5. Melt isomalt until translucent. Fill the center holes of the top cookies with isomalt to create a “glass” effect. Let set.
6. Decorate the top cookies with melted white chocolate or royal icing, leaving the glass section uncovered. Add sprinkles for a festive touch. Allow to set.
7. Spread a thin layer of white chocolate or royal icing on the edges of the bottom cookies. Place small sprinkles in the center, then press the top “glass” cookie onto the bottom. Let set completely.
