Christmas Special Kulkuls

I was digging into Indian Christmas recipes and I stumbled upon these adorable little treats called Kulkuls. They’re a Goan Christmas favorite, and oh my God, they’re the cutest 😍

Kulkuls, also known as Kalkals or Kidyo, are melt-in-the-mouth delicious, small, golden fried dumplings and glazed with sugar or dusted with powdered sugar, making them the perfect mix of crunch and sweetness. They are shaped using the back of a fork, to give us cute little curls that look like tiny shells.

What I loved most about this dish is how making Kulkuls is such a family thing. Everyone sits around shaping these little curls while chatting, laughing, and just enjoying the season. They’re a tradition passed down through generations, deeply rooted in Goa’s Indo-Portuguese culture and Anglo-Indian heritage.

The recipe is super simple, and uses simple ingredients like a dough of flour, sugar, and coconut milk. I’ve made it this year and pretty sure, I will be making it every year going forward. Its just that good!

Recipe:

Kalkals Recipe

Ingredients:
• 1 cup semolina (suji)
• 1/4 cup ghee
• 1 1/2 cups all-purpose flour (maida)
• 1/4 tsp salt
• 1/2 cup powdered sugar (plus 1/4 cup for coating)
• 1/2 tsp baking powder
• 1/2 cup coconut milk
• Refined oil (optional: add 1 tbsp ghee for flavor)

Method:
1. Mix semolina and ghee; rest for 5-10 minutes. Add flour, salt, powdered sugar, and baking powder; mix until crumbly. Gradually add coconut milk to form a stiff dough. Rest for 15-20 minutes.
2. Roll dough into 1/2-inch cylinders, cut into 2/3-inch blocks, flatten on a fork, and roll into ridged shapes.
3. Deep fry on low-medium heat until golden and crispy (5-7 minutes per batch).
4. Sprinkle with powdered sugar while warm and toss to coat.
5. Store in an airtight jar for up to 15 days.
