Cook pork belly in soy sauce in a frying pan – a variation of one of the most popular and loved meat dishes of Asian cuisine. Pork turns out tender and melts in your mouth, its taste is complex, spicy and refined. The dish is great for lunch as well as a festive dinner, you can serve it with a side dish or as a meat appetizer, sprinkled with green onions. You can also serve pork with noodles and boiled eggs – that’ll be a simple and delicious dinner.

✅ Ingredients
• pork belly – 35 oz | 1 kg
• garlic – 5 cloves
• ginger – ½ oz | 15 g
• scallion – ½ oz | 20 g
• 2 bay leaves
• red chili flakes – 1 tsp
• soy sauce – 3 fl oz | 80 ml
• rice vinegar – 2 tbsp
• sugar – 2.5 tbsp
• water – 1 pt | 0.5 l

📙 Preparation
1. Cut the pork belly into 1 inch thick pieces, chop the scallion, slice the garlic and ginger.
2. Preheat a frying pan over medium heat, add the pork pieces, roast them for 12-15 minutes until golden crust.
3. Add the scallion, garlic and ginger, stir. Cook for 1 minute over medium heat.
4. Add sugar, chili flakes, bay leaves, rice vinegar, soy sauce, water, and stir. Bring to a boil, turn the heat down until minimal, cover with a lid, and simmer for 1 hour.
5. Then remove the lid, turn up the heat and cook for 10 more minutes, stirring, until the sauce has thickened.
6. Remove the fat with a spoon.
7. Serve your pork in soy sauce hot, sprinkled with scallion, as a meat appetizer or with noodles, rice or veggies.

❗️Advices
1. Add any spices you like.
2. Chili flakes can be replaced with fresh chili pepper.
3. Pork in soy sauce can be stored in the fridge, then reheated when needed and served with noodles.
4. The removed melted fat can be stored in a jar in the fridge, and be used for frying potatoes.
5. Rice vinegar can be replaced with apple cider vinegar or white vinegar (but you’ll need to reduce the amount of it).
