As an Odia bahu (daughter-in-law), I have got the opportunity to sample the taste of Odisha, and the humblest of Odia recipes have attracted my attention because I love simple, easy recipes. Ambula rai is one such unique chutney recipe that has got me hooked. The slightly spicy and tangy mustard sauce comes with subtly sweet notes that eliminate the rawness, pungency, and bitterness of mustard and impart a lip-smacking aroma that will make you addicted to Odia recipe, which is a cousin of Bengali kasundi. #recipesofindia
What sets Odia ambula rai apart from its Bengali counterpart is the main ingredient used for tartness. While Bengalis use raw mangoes for the sour element, the traditional Odia recipe gets its tang from ambula or salted dried mango kernels.
My 2-year-long stay in Odisha is an opportunity to take back home some memories of the flavors of this coastal state. True, I do get bored sometimes because I am a human after all. I long for my ethnic meals here.
To attract my attention to Odia food, my MIL often brings to the table her authentic flavors in the form of chutneys that Odia culture refers to as khatta. Tomato khatta is widely popular here. But the variety of chutneys in the Odia food culture has been a huge surprise.
I keep trying those variations with my twists.
But I have not added any twist to the traditional ambula rai recipe. This comes directly from my mother-in-law's recipe book. I did enquire about this tangy mustard sauce from MIL after coming across my friend, Kalloni Patnaik's, recipe. #creatingforindia #viral #share #love #youtube #subscribe

Ingredients
1/4 cup - black and yellow mustard (you may take either or both)
1 tsp- Jeera/cumin seeds
3-4 Amubla (salted, dried mango kernels) - ask me in comments for a substitute (added for tartness)
1/2-1 tsp Salt
2 tbsp- Jaggery
1 tbsp- Mustard oil
1/2 tsp- Panch foron (phutan) - a mix of 5 Indian spices - cumin, fennel, black and yellow mustard, nigella seeds, and fenugreek seeds
Curry leaves
Green chili
Kashmiri chili powder
curd (optional)- you may add curd before serving (according to my MIL) - i wanted to keep this recipe vegan so have not included yogurt here, but feel free to use as it takes the mustard chutney to a different level altogether. I love ambula rai both ways.

Ambula rai recipe without onion garlic is yum and flavorful and stores well for a week without curd in the refrigerator. Remove a little amount with a clean spoon and set the remaining mustard sauce in the refrigerator. Enjoy khatti meethi chutney like none other!
