I know you're not supposed to fight it, but I just can't help it. Took about 4 hours of practice to down this beast.

Strategy wise, look for the few gaps where you can sneak in a heavy attack, e.g. after he's done a charging attack (roll back+right; 00:05), delayed stab (roll forward; 07:51), or uppercut swing (roll backward then forward; 00:43). Charging attack is the easiest to punish, so keep your distance and try to bait him to use that move as much as you can.
