How to Make Traditional Irish Colcannon Recipe

Traditional Irish Colcannon

Timings.
• Prep Time: 10 mins.
• Cooking Time: 30 mins
• Total Time: 40 mins.

Servings. 6.

Ingredients.
• 2 kg Potatoes, Rooster, Kerr’s Pinks, Maris Pipers, King Edwards (Yukon gold are best if in the USA)
• 3 Medium Onions, peeled and chopped.
• 1 Head of Cabbage, washed and sliced thinly.
• ¼ cup (100g/3 ½ oz) Butter.
• ¾ cup (175ml/6 fl oz) Warm Milk.
• 1 tsp White Pepper.
• 1 tsp Salt
• 2 tbsp Butter, to serve.


Method.

1. Peel and chop the onions.
2. Peel the potatoes and if large, cut them in half.
3. Remove the outer leaves from the cabbage and set them to one side.
4. Cut the cabbage in half removing the core before slicing it thinly, place in a cauldron and wash it.
5. Place the onions in a large saucepan, followed by the sliced cabbage, and finally arrange the potatoes on top.
6. Cover the potatoes completely with the cabbage leaves.
7. Place on medium-high heat and bring to a boil before reducing the heat and simmering until the potatoes are soft in the centre, remove from the heat.
8. Strain off the water and place the lid on the potatoes for 5 minutes.
9. Add pepper, salt, 100g of butter and warm milk and mash until smooth.
10. In Ireland there is a tradition of adding a coin or ring to the colcannon - if you are doing this wrap it in some tin foil and hide it in the colcannon.
11. Serve in a large bowl and using a spoon make a hollow in the centre and add some more butter.
12. Mmm, Scrummy!!!
