Chicken Caesar Sandwich

For the chicken
1 chicken breast, halved lengthwise and pounded
Salt to taste
1 tbsp garlic powder
1 tsp black pepper
1 tbsp smoke paprika powder

For the breadcrumbs :
2 cups panko bread crumbs

For egg wash:
1 egg + 1/2 cup water

For the dry batter
1 cup all purpose flour
Salt to taste
1 tsp black pepper
1 tbsp garlic powder


For the Caesar salad :
1/2 cup mayonnaise
2 cloves fresh garlic, minced
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
2 tsp lemon juice
1/3 cup freshly grated Parmesan cheese
1 tsp fresh ground black pepper
2 tbsp extra virgin olive oil
2 cups lettuce , washed and chopped

To assemble

3 mini loafs of bread
3 tbsp butter, to toast the bread loafs
Parmesan cheese, freshly grated
3 tbsp Caesar dressing

Method:

Pat dry the chicken and season with salt pepper garlic powder and smoked paprika powder.

Make egg wash: In a bowl crack an egg add water and whisk until smooth, set aside.

For the dry batter: In a bowl mix all purpose flour, salt, garlic powder and black pepper.

In a separate bowl add panko bread crumbs.

Coat the seasoned chicken in dry batter, then the egg wash batter repeat again in dry and egg batter. Finally coat with panko bread crumbs. Repeat the same process until all the chicken fillets are coated.


Fry oil in a pan until it reaches 350 F .
Carefully add the chicken to the oil and cook for 4-5 min flipping sides in between or until the chicken reaches an internal temp of 165 F.
Make Caesar dressing: In a bowl add mayonnaise, Dijon mustard, Worcestershire sauce, salt , pepper, lemon juice, freshly minced garlic , olive oil and Parmesan cheese. Mix until well combined. Reserve 1/2 of the dressing for later use . Add lettuce in rest of dressing and mix well to combine.

Assemble the sandwich:

Apply butter on the bread and toast until crisp and golden. Add some of the reserved Caesar dressing on one side of the bread . Add breaded chicken. Top it with some Caesar salad. Garnish with freshly grated Parmesan cheese. Finally close the loaf and serve warm.
