Shev Bhaji (Khandeshi/Jalgaon Special, Spicey Curry with Gram Flour Noodles) is a very popular dish from Jalgaon region in Maharashtra in India. It is made of onion, coconut, spices and gram flour noddle which is called as sev/shev. This can be served with Chapati (Roti) or Rice with salad.

Detail recipe for Shev Bhaji

Serves: 3-4

Ingredients:

For Shev Bhaji:

• Oil, 2 tsp and 3 tbsp
• Garlic(Lahsoon), 4 to 5 cloves, peeled
• Onion (Pyaaz), 2 medium size, roughly chopped
• Ginger (Adarakh), 3 to 4 small pieces
• Dry Coconut (Nariyal), 1/2 cup
• Red Chilli Powder (Lal Mirch), 2 tsp
• Coriander Powder (Dhaniya), 2 tsp
• Garam Masala Powder, 1 tsp
• Turmeric Powder (Haldi), 1/4 tsp
• Water, 1/4 cup for grinding + 2 cup for curry
• Fresh Coriander (Hara Dhaniya), 1/4 cup
• Sev/Shev (Spicey Gram Flour Noodles), 2 cup
• Salt to taste

Tips and Tricks to Remember:
• Do not burn the onion and coconut mixture while sauteing.
• Do not burn when frying grinding mixture. Fry on low flame till it changes in color little and oil separates.
• You can add shev quantity as per liking. Let shev absorb and become soft after adding it.
