Episode 03 of ‘Jar of Memories’ brings you the Stuffed Raw Mango Pickle, also called Miskut by many. It is a common occurrence in a Goan household because it is a significant part of every home's 'purument' planning ('purument' refers to the pre-monsoon preservations). The whole raw mango is cut and pickled in Sea Salt (with its seed removed) for a couple of days, and then stuffed with a strong-flavoured blend of spices, and then immersed in brine topped with oil. It is a well known fact that the sap enhances the resulting taste, which is why the stalks are usually left intact. Stored in ceramic jars in a store-room, this miskut will sing songs and tell tales of how kids (from time immemorial) awaited quiet afternoons to steal a sour-spicy bite!

Ingredients:

For the Mango preparation:
2 dozen Raw Mangoes, with soft seeds, washed and wiped dry
3/4th Cup Sea Salt

For the Stuffing Masala:
1 Tablespoon Oil, to fry
1 Tablespoon Mustard Seeds (Rai/Sarsoan)
1 teaspoon Fenugreek Seeds (Methi seeds)
1/2 Cup of Vegetable Oil (Sunflower)
2 Tablespoons Mustard Oil
1 teaspoon Asafoetida powder (Heeng)
10-12 Tablespoons of coarse Red Chili Powder

For the Preserving Brine & Oil:
1& 1/2 Cups Boiled Water, cooled
1/4 Cup Sea Salt
1/2 Cup Oil, heated and then cooled
1 teaspoon Mustard Seeds
