Whose mouth does not water at the name, smell and sight of 'Tora Sheer' (raw mango slice)?!
Episode 02 of ‘Jar of Memories’ brings you a version of the raw mango pickle that you can quite easily recreate and relive. This recipe brings out the best of the raw mango making it an appetizing accompaniment to your meals or even a bowl of Canjee :)
Pickling raw mangoes are (or were) a ritual practiced in nearly all Goan homes. Come Mango season, and the work of preserving the fruit begins. Every fruit of nature is put to good use. The effort thus sown bears its own fruits at the table providing variety to the palate and joy to the soul. Unbeknownst to our ancestors, through these annual traditions, planning and execution got etched into our culture.

Ingredients:
4 Raw Mangoes (weighing nearly 900 grams with their seeds; washed, and wiped clean)
1/4 Cup Sea Salt
1 Tablespoon Mustard Seeds (Rai/Sarson)
1 teaspoon Fenugreek Seeds (Methi)
1/4 Cup of Vegetable Oil
2 Tablespoons of Mustard Oil
1/2 teaspoon Asafoetida
3 Tablespoons Red Chili Powder (coarsely ground)

This pickle must be refrigerated and it can be stored for 3-4 months. Avoid any moisture/contaminants getting into it to ensure it lasts longer,
*If you choose to store the pickle at room temperature, follow the recipe as shown for the mango and spices, and leave out the oil. Fill a jar with the mixture of the drained mango and ground spices and leave it for a day. After 24 hours, fill the jar with sufficient oil (which has been boiled with asafoetida and cooled) to completely submerge the mango pieces. If kept well, in a cool, dark place, without moisture contamination, this can last for about 6 months.
