Hot & Healthy Find: Ezekiel 4:9 Sprouted Whole Grain Pasta (with 15-minute Whole Foods Recipe)
Ive always loved pasta; its just one of those foods I dont think I could ever give up. Now that Im a busy mom with a family to take care of Ive learned to appreciate pasta for its convenience and versatility too! I wont eat the nutrient-poor white stuff though (which pretty much means no pasta at restaurants). I made the switch to whole grain pasta years ago when I started eating a whole foods diet, but in the last four or five years Ive discovered sprouted whole grain pasta. While regular whole grain pasta is still fine, sprouting takes whole grains to a whole new level. Thats because sprouting is the only way to release all of the vital nutrients stored within whole grains. The sprouting process starts by germinating whole grains in pure filtered water. This activates beneficial enzymes, which causes sprouting and releases the nutrients within the whole grain that would otherwise lay inactive. Since Im always looking to maximize nutrition whenever possible sprouted pasta is right up my alley
My favorite brand is Food for Life Ezekiel 4:9 Sprouted Grain Pasta (its available in Whole Foods Market, natural foods stores and some mainstream supermarkets). And, yes, it tastes good! It has a pleasant, mild, nutty-like flavor and a slightly meaty, hearty texture. And, with 7 grams of fiber and 9 grams of protein per serving, it is a very FILLING whole food. I have a good appetite and I bet I could easily eat at least 2 cups of white pasta, but the sprouted stuff is so filling and satisfying that I can only eat about 1 cup at a time. My good friend Emily Kresser suggested I provide more quick and easy recipes so heres a hearty and delicious vegan whole foods meal that takes no more than 15 minutes to prepare. Hopefully Emilys sweetie, Todd will like it too ;)
15-Minute Sprouted Spaghetti, White Beans & Veggies
•2 tablespoons extra virgin olive oil, plus more to taste
•4-5 cloves garlic, finely chopped
•2-3 large shallots (or 1/2 red onion), finely chopped
•Sea salt, to taste
•3 carrots, peeled and finely chopped
•2 red bell peppers, finely chopped
•1/2 box of Food for Life Ezekiel 4:9 Sprouted Whole Grain Spaghetti, cooked according to package directions
•1 can (15 ounces) cannelloni beans
•1/2 cup chopped parsley
•Juice from 1/2 lemon
•1/2 cup walnuts
1.In a large saucepan, heat the oil over medium-high heat. Add the garlic and shallots; sauté for 1-2 minutes, or until shallots soften. Season with salt to taste. Add the carrots and red bell peppers, sauté for 2-3 minutes, or until veggies are crisp-tender.
2.Add the pasta to the saucepan; drizzle with a bit of extra virgin olive oil. Season with salt to taste. Stir in the cannelloni beans, parsley and lemon juice. Remove saucepan from heat.
3.Place the walnuts in a food processor and process into fine crumbs. Add the walnuts to the pasta dish and stir to combine. Serve warm.
