🟢材料:
鯇魚腩 1件
豆腐 1件
薑、蔥 適量
🟢豉油汁:
水 1飯碗
糖 1茶匙
胡椒粉、蠔油、生抽、老抽、鹽 少許

🟢做法:
1️⃣ 放少許鹽在水中把豆腐浸泡一會去除豆腥味,瀝乾後切成塊備用。
2️⃣ 魚腩刮去肚內黑膜,洗淨吸乾水備用。
3️⃣ 1碗水加入糖1茶匙、胡椒粉、蠔油、生抽、老抽、鹽少許拌勻調製成豉油汁備用。
4️⃣ 熱鑊下油把豆腐煎至兩面金黃,盛出備用。
5️⃣ 魚腩煎香,加入薑、豆腐及調好的豉油汁,中火煮約5分鐘,如汁太少可轉小火。
6️⃣ 勾芡加入蔥段,即可上碟。

🟢Ingredients:
Grass carp belly - 1 piece
Tofu - 1 piece
Ginger, spring onions - as needed
🟢Soy Sauce-based Sauce:
Water - 1 cup
Sugar - 1 teaspoon
White pepper powder, oyster sauce, light soy sauce, dark soy sauce, salt - a small amount

🟢Cooking Directions:
1️⃣ Soak the tofu in salted water for a while to remove the beany taste. Drain and cut into pieces.
2️⃣ Scrape off the black membrane in the grass carp belly, wash and pat dry.
3️⃣ Mix 1 cup of water with 1 teaspoon of sugar, a pinch of white pepper powder, a dash of oyster sauce, a splash of light soy sauce, a little dark soy sauce and a pinch of salt to make the sauce.
4️⃣ Heat up some oil in a pan and fry the tofu until both sides are golden brown. Set aside.
5️⃣ Fry the grass carp belly with ginger until fragrant, add tofu and the prepared sauce. Cook over medium heat for about 5 minutes. If the sauce is less, lower the heat.
6️⃣ Thicken the sauce with cornstarch slurry and add some chopped spring onions. Serve hot.
