Hello Everyone! Welcome to United Cooking! Today, I will be making Sri Lanka Jaffna, sothi. I will show you 5 different recipes for sothi. You can eat any of these recipes with rice, string hoppers, or puttu. You can eat this at any time of the day!

Ingredients for 5 Sothi:
Onion - 1 Medium Sized
Dry Chili - 1
Green Chili - 4
Curry Leaves - 3 Stem
Lemon - 1
Cummin Seeds - 1 1/2 Teaspoons
Fennel Seeds - 3/4 Teaspoons
Black Pepper - 1/2 Teaspoons
Mustard Seeds - 1/2 Teaspoons
Turmeric - 3/4 Teaspoons
Oil - 2 Tablespoons
Salt - Your Preference
Tamarind - Small Amala Size
Fish - Your Preference
Tomato - 2 Medium Sized
Coconut Milk (1st, 2nd, and 3rd Milk) - 1/2 Coconut

Coconut Milk Steps:
I shredded half a coconut, then added a little water to it. Then I squeezed the milk from the coconut. This is called 1st Coconut Milk.
The second time, I added more water and squeezed the milk from the coconut. This is called 2nd Coconut Milk.
The third time, I added even more water and squeezed the milk from the coconut. This is called 3rd Coconut Milk
*Instead of using fresh coconut milk, you can buy coconut milk can or a coconut milk powder. If you use that, you first have to boil onion, chili, etc, in water, then add this milk and boil. In Sri Lanka, they use fresh coconut milk. This is the reason why I used fresh coconut milk.*

Tips For When Your Cooking:
Dont boil sothi for a long time because this will cause the sothi to curdle. When the sothi starts to boil, stir the sothi!!

Basic Sothi When you add onions, green chili, tomatoes, salt, and 3rd milk, instead of lemon juice, you can add raw mango to the sothi and boil together.

Saute Sothi When you are sick and you don't like to eat proper food, this is a perfect time to eat this kind of Sothi because you can eat it with string hoppers.

Raw Sothi Compared to rice, it is better to eat this sothi with string hoppers.

Tomato Sothi You can add more tomato for this recipe because you didn't add any sourness to this sothi.

Fish Sothi Instead of using fish, you can use shrimp or dry anchovy fish.
