These Copycat Crumbl Apple Crumb Cake Cookies are made with a soft cinnamon cookie, filled with delicious homemade apple pie, topped with luscious caramel and finished off with crunchy cookie crumbs.

_Ingredients For Cookie_

1/2 cup soft butter (113g)
1/2 cup brown sugar (100g)
1/4 cup granulated sugar (50g)
1 large egg
1 tsp vanilla extract
1/2 tsp ground cinnamon
1 tsp salt (6g)
2 cups all purpose flour (240g)
1 tsp baking powder (5g)
1 tbsp cornstarch (10g)
2 tbsp butter
1/4 cup granulated sugar + 1/2 tsp cinnamon

_Apple Pie Filling_

1 large apple
2 tbsp butter
1/4 cup brown sugar
1/2 tsp ground cinnamon
1 tbsp cornstarch
1 tsp lemon juice
a pinch of nutmeg

_Caramel_

10 soft caramels
2 tbsp cream

_Crumble Topping_

2 tbsp salted butter
2 tbsp brown sugar
2 tbsp all purpose flour
pinch of cinnamon

Recipe

In a large bowl, add softened butter, sugars, egg and vanilla extract. Min until well combined.
Add flour, baking powder, cornstarch, salt and ground cinnamon. Mix until well incorporated.
Use a large cookie scoop and scoop 6 cookie dough balls. Each dough ball weighs around 3oz.
Use the bottom of a measuring cup to press a circle into the each cookie dough.
Press the sides of the dough with your fingers into a nice circle.
Bake @350°f for 13-14 minutes.
Peel and slice one large apple. Chop into small cubes. Melt butter in a pan on medium heat and add apple, sugar, cinnamon, cornstarch, lemon juice and nutmeg. Cook for 3-4 minutes until apple gets soft.
Take the cookies out of the oven and press the measuring cup back into the hole. Apply melted butter and coat each cookie into cinnamon sugar mixture.
Pour 1 tbsp apple pie filling into each cookie.
Melt 8-10 soft caramels with 2 tbsp cream. Drizzle the caramel over the cookies.
For the crumbs, melt 2 tbsp butter in a pan and add flour with brown sugar and ground cinnamon. Cook at medium heat for about 3-4 minutes.
Top the cookies with crumbs and enjoy!
Each cookie weighs 4.5oz.
