✍🏻𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦:
For Sabji:
Round Gourd/Tinda(टिंडे) - 500 Grams
Potato(आलू) - 4-5
Onion(प्याज) - 3
Tomato(टमाटर) - 2
Green Chilli(हरी मिर्च) - 2
Ginger(अदरक) - 1 Inch
Oil(तेल) - 1 Serving Spoon
Salt(नमक) - Some
Red Chili Powder(लाल मिर्च पाउडर) - Some
Turmeric Powder(हल्दी पाउडर) - Some
Water(पानी) - 2 Cup

For Masala:
Roasted Gram Flour(बेसन) - 1/4 Cup
Coriander Powder(धनिया पाउडर) - 2 Spoon
Turmeric Powder(हल्दी पाउडर) - 1/2 Spoon
Red Chili Powder(लाल मिर्च पाउडर) - 1 Spoon
Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
Crushed Fennel Powder(क्रश सौंफ पाउडर) - 1 Spoon
Roasted Cumin Powder(जीरा पाउडर) - 1 Spoon
Garam Masala(गरम मसाला) - 1/2 Spoon
Salt(नमक) - 1/2 Tsp Or As per taste
Black Salt(काला नमक) - 1/2 Tsp Or As per taste
Asafoetida(हींग) - Some
Oil(तेल) - 1 Tbsp
Curd(दही) - 2 Tbsp
Oil(तेल) - 1 Tbsp

For Gravy:
Leftover Masala(बचा हुआ मसाला)
Coriander Powder(धनिया पाउडर) - 2 Spoon
Turmeric Powder(हल्दी पाउडर) - 1/2 Spoon
Red Chili Powder(लाल मिर्च पाउडर) - 1 Spoon
Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
Salt(नमक) - Some
Boiled Vegies Water(उबली सब्जियों का पानी)
Dried Fenugreek Leaves(कसूरी मेथी) - Some
Garam Masala(गरम मसाला) - Some
Curd(दही) - 2-3 Tbsp
Coriander Leaves(धनिया पत्ती)* Turmeric Powder(हल्दी पाउडर) - Some

✍🏻𝐑𝐄𝐂𝐈𝐏𝐄:
Take medium-size Round Gourd/Tinda, Potatoes & Onion. Wash & peel them.
For Masala, take a plate & put roasted Gram Flour, Coriander Powder, Turmeric Powder, Red Chilli Powder, Kashmiri Red Chilli Powder, crushed Fennel Powder, roasted Cumin Powder, Garam Masala, Black Salt, Plain Salt Asafoetida/Hing Powder, Mustard Oil & Curd. Mix well & keep the masala aside.
For Sabji, keep the pan on the flame, and put Mustard Oil & some Salt. Cook it by covering it on a slow flame. Then put whole Onion, Tinda, Potato, Green Chilli, Tomato, Ginger, Turmeric Powder, Red Chilli Powder, some Salt & Water. Cover & cook on a medium flame for 5 to 7 minutes or until it is half cooked. Then take out the boiled Veggies like Tomato, Onion, Ginger & Green Chilli & roughly chop them. Then take boiled Tinda, Potato & Onion. Slit them on the top crosswise. Do the same for the rest of the veggies. Then stuff the mixture into it as much as possible. After then, keep the pan on the flame, put some Oil & place the stuffed Veggies. Cover & gently cook them on low heat.
For Gravy, keep the other pan for heating, put Mustard Oil, remaining Masala, some Spices, boiled Veggies Water & ground Onion Tomato puree. Cover & cook until oil releases the edges. Then put roasted fenugreek Leaves, Garam Masala, some more boiled veggies Water & Curd. Put the stuffed Veggies into it & cook for more time. Garnish with finely chopped Coriander Leaves & serve the tasty stuffed Aloo-Tinda Sabji.
