Filipino Chicken Adobo Recipe:
Ingredients:
2lbs, Chicken ( cut into serving pieces ) or pork Belly
1/2 cup soy sauce
1/2 cup vinegar
4 cloves garlic (minced )
1 onion ( diced )
1 bay leaf
1 tsp. black pepper
1Tbsp cooking oil
1cup water
Salt to Taste
Sugar to taste
Instructions:

1. In a bowl, marinate the chicken or pork in soy sauce, garlic and pepper for at least 30minutes. Overnight marination is preferable for better flavor infusion.
2. Heat oil in a pan over medium heat. Add the marinated meat ( reserving the marinade ) and cook until browned on all sides.
3. Add onions and saute until translucent.
4. Pour in the marinade, including the soy sauce and garlc, into the pan. add the bay leaf and peppercorns.
5. Pour in the vinegar and water. Bring to a boil, then reduce the heat to low. Cover and simmer for about 30-45 minutes or until the meat is tender. Stir occasionally/
6. Taste the sauce and adjust seasoning with salt and sugar if needed, depending on your preference for saltiness and sweetness.
7. once the meat is tender and the sauce has thickened slightly, remove from heat.
8. Serve hot with steamed rice. Enjoy your Filipino Adobo!
