1 Medium Size Onion
1 Celery Stick
1 Carrot
4 tbsp Vegetable Oil
3 Bay Leaves
Pinch of Mustard Seeds
5 Black Cloves
1 Cinnamon Stick
2 Star Anise
1 Garlic Clove Crushed
1 tbsp. Chopped Ginger
2 tbsp. Mild Madras Curry Powder
1 tbsp. Chinese Salt
Half tbsp. Red Chilli Powder
1 tbsp. Turmeric Powder
Pinch of Black Pepper
Half tbsp. Salt
4 and Half tbsp. Plain or All Purpose Flour
2 and Half Glasses of Water

5 to 6 Large Maris Piper Potatoes
1 Litre Vegetable Oil
Cold Water for the Chips
Pinch of Dried Parsley
Pinch of Dried Red Peppers and Black Pepper
