Recipe:
Ingredients:
Fat eg szalonna, lard, or oil
3 onions (sliced)
1 pepper (optional)
3 tablespoon paprika
1 teaspoon whole caraway seeds (optional)
500g stewing beef eg shin or skirt (cubed and salted)
6 C water or stock
2 carrots (diced)
1 parsley root (diced)
2 potatoes (diced)
Salt to taste

Method:
If using szalonna, render the fat (leave the bits of meat from the pork)
Sautee the onions until glassy
(If adding caraway or peppers add with onion)
Add salt and paprika, at a low heat to release the flavour.
Sear the meat in the hot fat then add water or beef stock and simmer 1.5-2 hours
add carrot and parsley root – simmer for a bit more
add salt to taste
add potato when vegetables are half cooked and cook until all vegetables are tender
