1 lb (500g) ground beef ( I usually grind my own out of beef chuck)
3 Tbs crushed tomatoes from a can (you can also use one tbs tomato paste)
1 Tbs cooking oil (I used vegetable oil)

Beef Seasoning:
1 tsp cumin
1 tsp coriander seeds
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1 tsp oregano (dried)
1 tsp Kosher salt (adjust to your taste)

two Puff Pastry sheets (10 x 15 inches)
6 oz (200g) grated mozzarella cheese
one egg (for eggwash)

In a small skillet, toast the cumin, coriander seeds, and pepper until you see the first sign of smoke. Add them to a mortar and grind them roughly. Mix in the garlic powder, paprika, oregano, and salt.
If you already have the ground beef, heat a large skillet on medium heat and add one tbs vegetable oil. Add the ground beef and spices and the crushed tomatoes, and cook until done about 10-15 minutes. Let it cool down a little.
Set your oven to 400F, then sprinkle some flour on your counter and stretch the pastry sheets just a little. You don’t have to do this, but get wider pastries if you do.
Cut each sheet into eight equal rectangles and set them apart.
Make eight mounds of shredded mozzarella for each pastry sheet on a cookie sheet lined with parchment paper.
Add a spoonful of the ground meat on top of each mound. For a vegetarian version, add refried beans.
Cover each mound with a pastry sheet rectangle and tap around the edges. Poke holes on top of each with a fork for the steam and brush with the beaten egg.
Bake for 13-15 minutes until golden and delicious. It is best if eaten immediately.
You will end up with more meat than needed, but that’s always great because you can add it to the plate with fresh salsa or guacamole or store it in the fridge.
