Mum's Everyday Bread Loaf Recipe

Ingredients for bread:
200g strong white flour
50g strong wholewheat flour
1 dsp yoghurt, mixed with warm water to make 160ml in a jug
1 1/2 tsps sugar
3/4 tsp salt
3/4 tsp easy blend (fast action) dried yeast

Ingredients for topping:
1 tbsp milk
2 tsps oatmeal flakes (optional)

Instructions:
1/ Link a 6" round baking tin with baking parchment.
2/ In food processor, combine dry ingredients; gradually pour in yoghurt and warm water mixture.
3/ Leave processor running for mixture to form a ball and then continue mixing for 3 mins.
4/ Knead dough on clean countertop / surface for a few minutes. Dough should spring back when poked.
5/ Place the ball of dough in oiled bowl and cover with a damp clean cloth and leave in a warm place to rise for 1 - 2 1/2 hrs, until the dough has approximately doubled in size.
6/ Knock back the dough, then turn out of bowl and knead lightly again and form a ball.
7/ Place the ball of dough in the 6" round tin, cover with tea-towel and let rise again for 45 - 90 minutes.
8/ Preheat oven to 200° C / 180° fan oven / 390°F
9/ Once risen again, brush the top of the loaf with milk and scatter with oats.
10/ Bake in oven for for 20-25 minutes, until browned. Turn the loaf out of tin and leave to cool on wire rack.
