I bake mostly Sourdough for health reasons, but this recipe adopted from Emma Fontanella is really simple for a quicker bread. I use her basic recipe, but add a bit more hydration. I also use 50% Bread flour and 50% Glyphosate Free Pasayten flour from BlueBird Grain Farms located in WA. I feel so much better using their flours, as I cannot get a lot of the pristine quality goods from Italy, where they actually care about how their food is grown.
