Simple Summer Dishes that bring us Together

Today I am sharing some of our family's favorite side dishes. These are dishes we eat at every BBQ and family reunion. Enjoy!

Root Beer Baked Beans
4 slices of bacon chopped into 1 inch pieces
1 large yellow onion chopped
1/2 cup molasses
2 TBL whole grain mustard
1 pound dried navy beans soaked over night in water
2 teaspoons apple cider vinegar

Mom's Bean Salad
Marinade
1 cup white vinegar
1 cup oil
1/2 cup sugar
4 1/2 tsp onion salt
1 Tbl garlic salt
1 1/2 tsp thyme
1 tsp basil
1 tsp capers with liquid
1/2 tsp dill seed
1/4 cup frozen OJ concentrate
4 TBl lemon juice
Blend and pour over
2 cans green beans
1 can wax beans
1 can garbanzo beans
1 can kidney beans
1/2 cup chopped onion
1 green bell pepper
1 can sliced olives
marinate for at least 3 hours

Corn Fritter Casserole
3 Tbl butter softened
3 large egg whites (I used 2 eggs)
1 (8oz ) Block cream cheese
1/2 cup finely chopped onion
1/2 cup chopped red pepper
1 (15 oz ) can whole kernal corn
1 (15 oz) can cream style corn
1 box Jiffy Corn Mix
Bake at 375 for 50 minutes
