Golden Brown Asparagus Fries! (Great Dipping Sauce)

Start with 1 lb. of big asparagus shoots (about 1/2 inch wide)
Snap or cut off the heavy non-edible ends. Set aside.

In a big dutch oven, or electric fry pan, heat up about a quart
of vegetable oil (about 2 inches deep) to between 300 and 325 degrees.

While your oil is heating up make your dipping sauce.
Just mix up:
1/2 cup sour cream
1 tbsp. lemon juice
1 tbsp. Dijon mustard
1/4 tsp. salt & 1/2 tsp. black pepper.
Set aside.

To fry your asparagus .... you will need 3 shallow pans.

Dish #1 put about 1 cup all purpose flour
Dish #2 put 4 eggs blended in a blender for 30 seconds
Dish #3 put about 2 cups of bread crumbs (any flavor)

Rinse off your asparagus and leave damp.
Dip damp shoots in the flour, then the egg wash, then
the bread crumbs. Drop gently into the oil and watch
them very close. As soon as they get brown turn them
over for another 15 to 30 seconds them put them on a
plate of paper towels! Serve with the dipping sauce!
