Even the smell of this curry emanating from your kitchen will delight everybody...
Ingredients:
500 gm chicken (ground)
½ tsp garlic paste
½ tsp ginger paste
2 green chilli (chopped)
2 tbsp coriander (chopped)
3 tbsp fried onions (ground)
¾ tsp garam masala
½ tsp pepper
¾ tsp salt
2 tbsp bread crumbs
2 tbsp corn flour
1½ tsp butter
2 tbsp cooking oil
½ tsp cumin
1 bay leaf
1 small cinnamon stick
3 cardamom
4 cloves
2 dry red chilli
¼ tsp mustard seed
½ cup onion (thinly sliced)
½ tsp garlic paste
1 tsp ginger paste
½ tsp red chilli powder
½ tsp coriander powder
¼ tsp turmeric
½ tsp garam masala
¾ tsp salt
1 cup coconut milk
Instructions:
1. Firstly, start by adding chicken, garlic paste, green chilli, coriander, fried onions, garam masala, pepper and salt to a bowl - mix everything together well.
2. Mix in bread crumbs, corn flour, butter, and use your hand to mix all ingredients together well.
3. Spread cooking oil over the inside of your hands (palm and fingers), and roll the meat into medium sized balls (kofta).
4. Then place the kofta into a pan containing around 3 tbsp cooking oil, and cook for 6-7 minutes, then take them out and put onto a plate aside.
5. In a pan, drizzle cooking oil, add cumin, bay leaf, cinnamon stick, cardamom, cloves, dry red chilli, mustard seed, and use a spatula to mix well.
6. Add onions and saute until light brown.
7. Next, put in garlic paste, ginger paste, red chilli powder, coriander powder, turmeric, garam masala and mix very well (add water if needed).
8. Whilst continuously mixing, add salt and pour in a cup of coconut milk.
9. Add in the chicken kofta balls, stir and cook for 7-8 minutes.
10. Mix and sprinkle coriander, then ready to enjoy!
