How to make Bitter Gourd Pickle-Karela Pickle Recipe-Simple and Easy Pickle Recipe-Mero Recipe

I am sharing the recipe of bitter gourd/ karela pickle which can be stored for more than a month. There are various ways, and one of them is I am presenting here. I hope you like it.

Here are the list of Required Ingredients for making Karela/Bitter Gourd Pickle:

1.Bitter Gourd(करेला)-800gm
2.Yellow Mustard Seed(सर्सौंको दाना)-2tbsp
3.Coriander Seed(धनियाको दाना)-1tbsp
4.Fenugreek Seed(मेथीको दाना)-1/2tsp
5.Ajwain Seed(ज्वानोको दाना)-1/2tsp
6.Cumin Seed(जीराको दाना)-1tbsp
7.Chat Masala or Mango Powder(चाट मसला वा आँपको धुलो)-1tbsp
8.Salt (नुन)-3tsp
9.Red Chilli Powder(खोर्सानी को धुलो)-1tsp
10.Mustard Oil(तोरीको तेल)-1 Cup
12.Vinegar-2tbsp(Optional)
13.Turmeric Powder(बेसार)-1/2tsp(Optional)

Instructions:

1.Wash and Chop Bitter Gourd (Karela) making long slices, avoid its inner part.

2.Pour it into the mixing bowl and mix well adding 2 tbsp salt. Keep aside for 2 hours in room temperature.

3.After 2 hours, you can notice that moisture separated from bitter gourd, Place a cotton cloth over a tray and spread Bitter Gourd. Keep it under fan for an hour to void moisture from it.

Prepare Spices required for Pickle until it gets dry:

4.Heat up the pan and add coriander seed, Yellow mustard seed, cumin seed, Ajwain or jwano Seed, fenugreek seed and red chilli pepper , stir fry until it turns slightly darker and transfer to a plate. Let it cool down.

5. Pour fried spices into blender and blend for few second, keep aside.

6.Now heat up the pan and add mustard oil, pour bitter gourd (Karela) and stir fry for 3 to 4 minutes in high flame.

7.Transfer it to a plate and let karela and oil cool down.

8. Take a mixing bowl, pour fried bitter gourd, blended spices, red chilli powder, mustard oil, Salt, Chat masala or mango powder, vinegar (Optional) and mix them well.

9. Transfer to air tight glass container. You can start eating after two days, but it can be even tastier after a week.

*Note: You should use glass container if you want to keep for longer time span.
